Cornbread Taco Bake

  • 1 lb ground beef
  • 1 (1 ounce) package taco seasoning
  • 1/2 cup milk
  • 1/2 can creamed corn
  • 1 T chopped jalapenos
  • 1T chili powder
  • 1 egg
  • 1/2 cup green pepper chopped
  • 1/4 cup chopped onions 
  • 1 (8 ounce) can tomato sauce 
  • 1  package cornbread mix
  • 1 (2 7/8 ounce) can French-fried onions (optional)
  • 2/3 cup shredded cheddar cheese
  • black olives (optional)
  1. In skillet, brown meat with onion and green pepper; drain.
  2. Stir in taco seasoning and tomato sauce
  3. Mix together cornbread mix, milk, corn, jalapeno, chili powder and add black olives and  half of the french fried onions if desired
  4. Pour 1/3 of cornbread in the bottom of pan
  5. Add the meat mixture to the pan
  6. Sprinkle half of the cheese over the meat
  7. Pour additional cornbread on top
  8. Bake uncovered at 400°F for 20 minutes.
  9. Top with cheese and french fried onions if desired.
  10. Bake 2-3 minutes longer.
Serve with pinto beans and a green salad.  Ole’!
