Chicken Burritos

Ingredients:

  • 3 chicken breasts, cooked and shredded
  • 1 can hominy, drained (optional)
  • 2 tbsp chili powder
  • 1 tsp chipoltle chile powder
  • 1-1/2 tsp garlic powder
  • 1-1/2 tsp onion powder
  • 2 tsp cumin
  • 1/2 tsp oregano
  • salt and pepper
  • 2 tbsp oil
  • 2 tbsp flour
  • one cup chicken stock (maybe a litle more)

Directions:

Cook chicken in skillet in a small amount of oil and shred when done and return to skillet.  Add oil to skillet and then add hominy, chile powders, garlic and onion powders, cumin, oregano, salt and pepper and flour.  Cook flour for a couple of minutes and the add the chicken stock.  Cook until broth has reduced.

Serve with tortillas, cheese, guacamole, sour cream, diced onions and lettuce.  Yum!
