Pecan Pie Muffins

These are SO easy to make and they taste just like a tiny pecan pie.  Who could resist?

Ingredients:

  • 1 cup pecans, chopped
  • 1 cup brown sugar, firmly packed
  • 1/2 cup flour
  • 2 large eggs
  • 1/2 cup butter, melted
Directions:
Combine first 3 ingredients in a large bowl, make a well in center of mixture and add melted butter.  In a separate bowl beat eggs and add to the dry ingredients and mix well.  Place 9 muffin liners in a muffin pan and spray with non-stick spray.  Fill  each muffin cup 2/3 full and bake at 350 degrees for 20-25 minutes.
