If I have to eat pizza my favorite is Spinach Alfredo. This recipe makes a delicious sauce.
Spinach Alfredo Sauce
- 1 1/2 tablespoon butter
- 1/4 cup onion, chopped
- 1 clove garlic, minced
- 1 1/2 tablespoon flour
- salt and pepper to taste
- 1/2 - 3/4 cup heavy cream
- 1/4 cup milk
- 1/2 – 3/4 cup parmesan cheese (get the good stuff)
- 1/4 teaspoon nutmeg
- fresh baby spinach leaves or frozen spinach, thawed and drained well
Sauté the onion in the butter until onion is translucent then add the garlic and sauté another minute. Add the flour and cook for a minute or two stirring constantly. Slowly add the cream and milk while whisking together. I added the milk because I thought it was getting a little too thick. You will just have to judge for yourself. Remember it thickens more when you add the cheese. Season sauce and add the cheese and continue to whisk. When sauce has thickened add the spinach and cook for one minute. Remove from heat.
Spread on top of your pizza dough and bake at 425 for 12-15 minutes. Sinful!
