My Granddaughter’s and niece’s love chicken strips or nuggets. They would eat them for every meal if we would let them. The Rae Rae dips hers in ketchup but Nana likes honey mustard (recipe below).
Ingredients:
- 2-3 chicken breasts
- 1/2 cup buttermilk
- 2 eggs
- 2 tbsp milk
- panko bread crumbs
- 1/2 cup flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp season salt
- season pepper
- peanut oil
- honey mustard (recipe below)
Place chicken breast in plastic bag and pound with an iron skillet until the breast is the same thickness throughout. Cut chicken in strips or nuggets and soak in buttermilk for 30 minutes. Add seasonings to flour in a shallow dish. Mix egg and milk together in another shallow dish. Place panko crumbs in yet another shallow dish. Dredge chicken in flour, then egg mixture and then roll in panko crumbs. Fry in hot oil until brown, about 4-5 minutes per side (drain on paper towel) or bake in oven on a sheet pan sprayed with non stick spray at 375 degrees.
Honey Mustard Ingredients:
- 1/4 cup mayonnaise
- 1 tablespoon prepared mustard
- 1 tablespoon honey
- 1/2 tablespoon lemon juice
Directions
- In a small bowl, whisk together the mayonnaise, mustard, honey, and lemon juice. Store covered in the refrigerator.
